What’s the difference between truffle and white truffle?

Truffles, the fruiting bodies of a group of fungi, are a prized delicacy in many parts of the world due to their unique and compelling aroma. They come in various types, each offering its own unique characteristics. Two of the most valued types are black truffles (Tuber melanosporum) and white truffles (Tuber magnatum), and while they might seem similar to the untrained eye, they are quite different.

Black Truffles

They also grow in Spain, Australia, and the U.S. These truffles, harvested from late autumn to early spring, are generally smaller in size than their white counterparts. Their exterior is rugged and dark, while the interior is usually a rich dark brown with intricate white veins. White Truffles

White truffles are primarily native to Italy, particularly the Piedmont region, around the city of Alba. They’re also found in parts of Croatia and Slovenia. Harvested typically from late autumn to late winter, they are larger than black truffles and feature a smooth exterior that ranges from cream to light yellow in color. Inside, they present a marbled look that’s visually appealing. White truffles are known for their powerful aroma, which some describe as a mix of garlic, cheese, and shallots. Their flavor, just like their aroma, is intense and garlicky, quickly transforming any dish into a gourmet delight.
